Delicious Cacao Pumpkin Brownies
These Pumpkin brownies are sure to please your palate this fall!
~ 1 egg
~ 1 egg yolk
~ 1 cup pumpkin puree canned, organic or homemade
~ 3/4 cup organic coconut sugar
~ 2 Tbsp pure maple syrup
~ 3 tbsp organic coconut oil, melted and cooled
~ 2 tsp pure vanilla extract
~ 1 cup cacao bliss
~ 1/2 tsp baking soda
~ 1/4 tsp sea salt
~ 1/2 cup dark chocolate chips
Preheat your oven to 350 degrees F, and line an 8×8 inch baking dish with parchment paper (I love this for easier removal!)
In a large bowl, whisk together the pumpkin, egg, egg yolk, coconut sugar, maple syrup, coconut oil, and vanilla until smooth. Sift the cacao bliss and combine with the baking soda and salt, then stir into the wet ingredients and mix well until smooth.
Stir in the dark chocolate chips, and carefully transfer to the baking dish using a rubber spatula, and smooth mixture out evenly.
Bake in preheated oven for 20-22 minutes or until the center appears set. Brownies will firm as they cool. Do not overbake!
Let cool completely in the baking dish (at least 1 hour) before cutting into squares and serving.
